Go To Meals!

Hi everyone!

We visited some participants yesterday afternoon during their Potluck event.
Something that came up in our conversations was our Go To Meals. Remember those long tiring days when you just don't want to stress anymore after work/school? Seems like all of us have some meals that we know well and/or doesn't take long to prepare.  One of mine is definitely ramen noodles. Another is garlic shrimp with rice.

  1. My Go-To Meals:

    1. Breakfast sandwich. I bake tater-tots in the oven for 14 minutes. Then I fry 2 eggs and add cheese and ham. Throw in the tater-tots in the pan and mix it all up, then add ketchup and eat it in a sandwich.

    2. Life Cereal with blueberries, raspberries, and sliced banana. And obviously milk. (This will be my dinner tonight because I am weird like that).

    3. Burgers made in the Foreman grill. I usually add ketchup, cheese, lettuce, tomato, and pickles. I usually eat this with frozen fries cooked with vegetable oil in the Foreman deep-fryer.

    4. Grilled cheese sandwhiches made in the Foreman grill. With Campbell's tomato soup. (I usually heat the soup on the stove, unless I am feeling exceptionally lazy in which case I use the microwave).

    5. Roast Beef and American Cheese sandwiches. Sometimes I make them cold and sometimes I grill them in the Foreman, depending on the kind of bread I have. (I buy whatever bread is on sale). I add dijonaise and pickles. Roast beef is my favorite, but if it is too expensive, I get smoked turkey or ham instead.

  2. 1. Tacos or Burritos. I eat one of these almost once a week. Sometimes vegetarian or sometimes steak or chicken. I always cook rice and beans. Depending on what I'm making I will use cheese and raw onion. Sometimes I will make salsa with tomatoes, onion and jalepeno and sometimes I will buy avocado and sour cream. Sometimes I keep it simple.

    2. Pasta and salad. Usually more than once a week I will make a pasta dish for dinner. Its simple and fast so this is my main fallback meal. Sometimes I make a vegetable to go along with it but when I'm making pastas it is usually because I want to eat fast and not bother with cooking. I always put cold tomato sauce on my hot pasta.

    3. Chicken or Sausage with rice/cous-cous and some vegetable.
    I usually pan fry my chicken and steam my vegetables.

    4. Cheeseburger.

    5.Soup and grilled cheese. I usually dont make the soup, my girlfriend does. but we eat this a fair amount.

  3. My Go-To meals are basic staples in most family-based kitchens. I credit my mother for teaching most of the recipes (as well as her distaste for measuring).

    1. No recipe for this one - frozen veggie burgers (only when on sale, because otherwise, they tend to be extremely expensive.) Heat them up, add some swiss or sharp cheddar, toast some type of wheat/oat bread, and add condiments at will. By far my easiest meal, maybe once a week, especially for the lazy afternoons.

    2. Beans. As a vegetarian, who also grew up in a Hispanic household, I gravitate towards these things. I've learned to prepare and love pretty much every type of bean imaginable. Stewing them with sweet potatoes or pumpkin adds to the heartiness and nutrition in a quick and easy way. I usually pair with brown rice, barley, steamed veggies, etc.

    3. Pasta with homemade marinara or garlic sauce. I also thank my mother for this one, as she taught me to make a really fast and simple, and delicious, traditional marinara from near scratch (I use cheap canned crushed tomatoes, rather than fresh). The garlic sauce is also easy, with garlic cloves, cream, butter, and lemon zest as the main, and easily accessible, ingredients. I usually toss with whole wheat pasta and steamed veggies.

    4. Grilled cheese and tomato soup. Perfect breakfast on a cold morning. Simple enough. Sometimes I add fresh tomato, different cheese combos, and avocado to the sandwich for more substance and flavor.

    5. Eggs. A staple breakfast for a devoted vegetarian. Cheap, easy, extremely versatile (omelettes, scrambles, whites, sandwiches, etc.) and satisfying.

    6. Homemade hummus with pita, bread, pretzels, veggies, etc. Definitely a cheap, quick go-to snack at any time.

    Pretty basic list, with endless preparation and combination possibilities.

  4. 1 Egg are fast and easy. I look in the fridge and see what there is. If there are veggies, I cut them up small and saute them before I put in the eggs and I just scramble them.

    2. I buy hummus at Trader Joe's and eat it with chips.

    3. I make tacos and quesadillas all the time.

    4. I make salads all the time and put a can of tuna on top if I need protein.

    5. I make hamburgers or turkey burgers and put them on whole wheat toast. I steam any veggies I have in the microwave.

    6. I make a soup with chicken broth, a diced chicken breast, good season italian dressing dry seasoning package, and a bag of frozen mixed veggies.

    7. Hot spaghetti noodles with a couple of spoonfuls of hot water in it. Mix in grated parmesan cheese, 2 raw eggs, and some cream, salt and pepper for a quick Pasta Carbonara.

    8. Protein shakes. I mix one cup juice, one cup berries, a scoop of protein powder, and a tablespoon of oil.

  5. I am arranging these by cooked meals (rare for me these days,) and uncooked meals.

    Cooked Meals:
    1. Fava beans, black-eyed peas and shittaki mushrooms, cooked in a wok with Thai Chilli Sauce, Curry, Soy Sauce and Tahini.
    2. Cherios and soy milk (doesn't require cooking but ingredients were cooked.)
    3. White rice and black beans.
    4. Tofu stir fry
    5. Pasta with tomatoes, oregano, pepper, garlic and onions cooked together in the wok.

    Uncooked Meals:
    1. Home-made fruit juice with wheatgrass powder mixed in.
    2. Home-made vegetable juice.
    3. Whole avocado, sliced.
    4. Salad, with mixed greens, tomatoes, cucumbers
    5. Hummus consumed with cucumber and olives. (I know hummus is not a raw food, but cut me a break.)
    6. Rice milk with honey and wheatgrass powder mixed in. (Same as above for the rice milk.)

  6. Our family's go to meal is breakfast, anytime of the day!
    We all love eggs, bacon, sausage, biscuits & gravy, and pancakes, if we have time.
    Everyone except my youngest twin loves pasta, pretty much any kind, so we have lots of pastas. Kit usually will eat the meat and bread, without the pasta!
    Then of course, sandwiches, easy and people can put whatever they want on them
