Show us a meal!

A simple request for this weekend: post a photo of one meal you prepared  for yourself or for others this weekend to the gallery on our blog.

To do so, you can either send the photo as an attachment to pollockj-413c@post.me.com or click on the arrow in the upper right corner of the pictures page on our blog (it's on the right column).

Thanks and have a great weekend!

  1. In the last 6 days I have made 3 baked ziti dishes. It is often a go to meal for me to make because I consider it pretty quick and easy to assemble an cook. My process is as follows: I preheat my oven (convection)at a temp. of 375/350 while I boil the pasta. Once the pasta is done boiling and drained, not rinsed (I reserve some of the pasta water)I add the following ingredients to taste. Salt/pepper/garlic powder/dried basil and a little evoo. All of this is in the original boiling pot (adding pasta water as I go if I find the pasta getting sticky.) Then the "CHEESE"... I always use ricotta and mozzarella and then whatever other cheese is around. This time shredded Parmesan, cheddar, asiago and provolone and of course sauce. This all gets mixed on the stove on a low, low flame. I find that keeping the mixture warm cuts down on the time that it needs to be in the oven. Once all is mixed and transferred into a baking dish, it hangs out in the oven for 30-45 minutes. The picture is of the one I made for my family on Saturday.
